Paleo Bread!

This recipe is from Elena's Pantry.  I really liked it because the almond flour made it a little sweet.

The consistency is a lot like banana bread/pumpkin bread, but I find that if you a) toast it in the toaster
or b) grill it in a pan or in a panini press, it really tastes and feels like you're eating REAL bread!

I liked a small slice of this bread with breakfast - with runny eggs and turkey bacon stacked on top.

Paleo Bread


  • 1 ½ cups blanched almond flour
  • 2 tablespoons coconut flour
  • ¼ cup golden flaxseed meal
  • ¼ teaspoon celtic sea salt
  • 1 ½ teaspoons baking soda
  • 5 eggs
  • ¼ cup coconut oil (I would recommend melting the oil in the microwave first)
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  1. Place almond flour, coconut flour, flax, salt and baking soda in a food processor (I used a hand mixer rather than pull out all of the food processor's parts.)
  2. Pulse ingredients together
  3. Pulse in eggs, oil, honey and vinegar
  4. Pour batter into a greased 7.5" x 3.5" Magic Line Loaf Pan (I greased with coconut oil.)
  5. Bake at 350° for 30 minutes
  6. Cool and serve

Here we go!

So I've been at this paleo thing a while. I've had SEVERAL false starts, and I still probably have more "cheat days" than the average person following the paleo lifestyle. I'm not equipped with any amount of legitimate willpower. I crave something - I eat it. I've always said there is a fat girl inside me just waiting to crawl her way out. However, the difference between my past and my present is that now I find paleo-friendly solutions to my cravings. I've found that if you stock your pantry and refrigerator with the following items, you can make a paleo version of almost anything on a whim:

Agave Nectar  
Almond Flour
Cacoa Powder
Canned Pumpkin 
Coconut Flour
Coconut Milk
Coconut Oil
Eggs
Ghee (Clarified Butter)
Raw Honey
Shredded Unsweetened Coconut
Soy & Dairy Free Dark Chocolate Chips (I use Enjoy Life)
Vanilla Extract

I use some meal helpers like sugar free marinara (I like Newman's Own Fire Roasted Garlic) and {occasionally} goat cheese. We also eat sweet potato fries in this house (I like Alexia brand). You can't take away my sweet potato fries.

In order to make this a way of life, I have made a few adjustments. That's why I named this blog PRACTICAL Paleo. These are the solutions that work for my family - so take them or leave them! I'm just excited to document and share.
